BrightStone’s Tomato Pie


Tomatoes from the BrightStone garden

  Pie Crust 4 cups flour 2 tsp vinegar 1/2 cup water 1 tbsp sugar 2 cups butter 1 egg   You can also use your own crust recipe or purchase pre-made crust Pie Filling 2 lbs tomatoes 1/2 tsp salt 1/2 cup mayonnaise 1/2 cup shredded sharp white cheddar 1/4 cup shredded parmesan 1/4 tsp freshly ground black pepper 5 slices thick-cut bacon, fried and crumbled 10 basil leaves few thyme springs handful of cherry tomatoes Instructions Preheat oven to 400 degrees Slice larger tomatoes about 1/4 inch thick. Place on paper towels to absorb moisture. Sit for 10 minutes, flip over on fresh towels and sprinkle with salt. Sit 10 more minutes. Combine mayo. cheddar, and parmesan. Arrange a layer of tomatoes in the bottom of pie crust, sprinkle with pepper, half the bacon, half the basil and half the mayo/cheese mixture. Repeat steps, ending with a final layer of sliced tomatoes. Scatter cherry tomatoes where they will fit and scatter thyme leaves on top. Bake 30-45 minutes if crust gets too brown, place foil around edges. tomato pie
